Washington-Based Concept Expands Beyond Home State with First Idaho Location
BOISE, IDAHO (May 7, 2026) – Cactus Southwest Kitchen + Bar has been announced as the newest addition to BoDo, set to open his fall. Located at 391 S 8th St., Cactus brings a fresh perspective to Southwest and Mexico-inspired cuisine, with a food and bar menu built around local ingredients and shaped by what guests crave, all interpreted through the restaurant’s distinctive point of view.
Founded in 1990 in Seattle by entrepreneurial brothers Marc and Bret Chatalas, the concept quickly grew to six locations across Washington state. The upcoming Boise restaurant marks the brand’s first out-of-state location. Known for their guest-first philosophy, the Chatalas brothers focus on what diners actually want, rather than what is trending, a perspective they believe will resonate with and complement BoDo’s evolving culinary scene.
“Boise has built something real, a food culture that’s genuinely its own, not borrowed from somewhere else. That’s truly something we recognize and respect,” said Marc Chatalas. “BoDo specifically made the decision to join the community easy. For 35 years we’ve been building something that isn’t trying to be anything else and Boise is exactly the kind of city that will get that. We’re excited to start from zero and earn our place in it.”
The menu features signature dishes you won’t find anywhere else, true Cactus originals. Offerings evolve with a seasonally driven menu that rotates quarterly, with only the most beloved items earning a permanent place on the menu. Behind the bar, the experience begins with a standout margarita and expands into a thoughtfully curated agave program centered on mezcal and tequila.
